Today was hot. Hot and humid. As much as I love Chicago, the weather is slightly insane – this year it decided to skip warm spring weather. Normally I can deal with the heat by not spending long periods of time in the sun, drinking plenty of water, and resting occasionally to recover a little. Today, I was working the booth all day. Hot, sweaty, gross.

Gourmet breakfast, from your home kitchen! We had some family come over for breakfast yesterday, originally wanting to go out to eat. Mom and I, however, wanted a healthier, more reasonably sized home-cooked breakfast. The night before, we came across this recipe, and decided to recreate it in the morning. The result was delicious – on the list of ‘best-breakfast-evers’.
It was dark out, and the lighting in the kitchen was funky, so this photo does not nearly do it justice.
Savory with a side of sweet – fresh green city market strawberries topped with some home-made granola. All of this can be thrown together in about 30 minutes.
Easy Toasty ‘Pumpkinut’ Granola
- 1/2 cup rolled oats
- 3 Tbsp honey (or maple syrup, to make it vegan)
- 1/3 cup chopped pumpkin seeds
- 1/3 cup shredded, unsweetened coconut
Directions: pre-heat the oven (I used the toaster oven, so time and temp may vary a bit) to 375. mix all ingredients in a bowl until well combined. line a baking pan with aluminum foil and grease the foil (butter, earth balance, coconut oil, anything. I forgot to do this, so my granola stuck!). Spread the mixture in a thin layer on the pan. Bake for 12-15 minutes, or until just golden brown. You may want to stir the mixture once to make sure that everything gets toasted. When finished, remove from the oven and let sit about 5 minutes to harden. Crumble and serve, any way you like.

I’m now blogging from our family’s summer house in Michigan City, Indiana, where we typically spend every weekend in the summer. I took the train out here, straight from work today.
I grabbed an iced green tea on the way – and my cup made me smile a little (thanks, train station starbucks!). I also snacked on a few of these.
Home-made, loaded energy bars. I’m not one hundred percent happy with the recipe, so I’m not going to post it. Hopefully the next batch will turn out closer to what I wanted.

Tomorrow I’m going for a long bike ride through the area, going to the beach, and enjoying the time away from the city for a weekend. Followed by food, family and 4th of July celebrations, of course.
